I discovered this little gem of a recipe off an instagram blogger I follow and you may know, her name is Verena aka The Girl About The Yard! I watched her little instagram stories each day creating this wonderful gin and so I acquired the recipe off her and made it myself. The gin turned out to be so good and delicious that I felt I needed to share it with you guys! I am a big gin lover and drink it most evenings (oh gosh I sound like an alcoholic haha), my mothers favourite is the Edinburgh Rhubarb and Ginger Gin so I thought I would try and recreate it, So here it is.....
What you will need:
I doubled these ingredients and made two different batches, one without the ginger..
1kg Rhubarb (Ours was from the garden)
400g Caster Sugar
800ml Dry Gin (I used Gordons)
Fresh ginger (optional, the more the better!)
And this is just how simple it is....
Before I start the steps, I just wanted to say that I made two batches up, one was just rhubarb & gin and the other was rhubarb and ginger with the gin.. this was a trial batch which was not stated in the original recipe I used however I would highly recommend making two batches (Doubling the gin, sugar and rhubarb amount) and have one batch which has fresh ginger in it. I did not put enough fresh ginger in mine and so my most important tip would be put more ginger in then you think depending on how 'spicy' you desire the gin to be!
Wash the rhubarb, trim the stalks and discard the base and any leaves. Cut the stalks into 3cm lengths.
Put the rhubarb in a large airtight jar with sugar and shake it. Once shaken, put the lid on and leave overnight. The sugar will draw the juice out of the rhubarb.
After 24 hours, add the gin, seal and shake everything around. You then need to leave the gin and rhubarb for about four weeks before drinking (I know, so long to wait but it will be worth it!).
You have two options when its ready to drink, you can either strain the liquor off through a sieve and transfer it to a bottle or leave the rhubarb and gin in the jar and ladle it out as and when you want a drink. You will notice the rhubarb gin is a lovely bright pink colour to start with but over time the colour will fade and become paler.
My personal favourite mixer to have with this gin is lemonade but that is because I like sweetness! This gin is really good neat/ on its own with some ice or either with tonic water or ginger ale.
Anyway, whatever you choose to mix it with, I hope you enjoy it as much as I did...
So go ahead guys, grab your rhubarb, sugar, ginger and gin...
